I have an authentic metal friand tin but the cakes all stuck to the bottom in spite of generous greasing.

I just want to reach out and grasp myself a friand right now, they look “real” as in, I really could lift one off the screen and sink my teeth in! I think the French have caught on to the Australians … when I was last in Paris, I saw friand moulds sold in quite a few places alongside the other cake tins.Tirelessly fighting anti-cake propaganda and cake-related injustices – for SOMEONE, SOMEWHERE, ALWAYS NEEDS CAKE (we’ll just skip over the fact that it’s usually me). Friands should be a little dense in texture from the ground almonds, but they are not dense in a bad way. If you’ve never had a friand before let me tell you they are a sweet little cake made with ground nuts, icing sugar and egg whites and they are delicious. don't wedge 2 in your face really quickly, best wedge 1 in and let it register in your guts as they are a tad filling when they expand in your stomach and the second one can lay a tad heavy if consumed quickly after the first. But if you want a flat top, I suggest that you cool the friands with the tops facing down on the wire rack.
