As the name suggests, this rainbow cake is a super fun and colorful dessert that’s guaranteed to brighten up your day. Color your fondant. After mixing 1 recipe of buttercream frosting and making 1 recipe of marshmallow fondant, split the fondant batch to add colors. Wrap the fondant tightly and securely until (and between)ready to use. Clean the cake pans and repeat the baking and cooling process with the remaining three cake layers.

Make the frosting. In a large mixing bowl, beat the shortening and butter on medium speed with an electric mixer until it’s light yellow. Gradually beat in the powdered sugar on low speed, then add the vanilla. Using the gel food colors, tint the batter in one bowl blue, one bowl red, one bowl green, one bowl yellow, one bowl orange (by using red and yellow), and one bowl purple (by using blue and red). For this cake, I did make probably the biggest one tier cake ever. It’s about 8-9” in height, and uses so many ingredients. Because it is a six layer cake I decided to make it in two batches. So three layers at a time, so therefore you still only need three tins! Place the first layer of cake on a cake plate or cardboard cake circle, then top it with about 1 cup of frosting and spread into an even layer.
